Our meal plan for the next fortnight as a family of four with a blue collar husband
Here's our breakfast, lunch and dinner plan for the next fortnight.
I absolutely love seeing different household’s meal plans. It's such a great way to find new inspiration for my own meal plans, get to know a household and a great chance to discover new recipes. So, I thought I would share our meal plan for the next fortnight, and hopefully, make this a regular post.
For a bit of background on this fortnights meal plan, it’s winter here. Our garden is pretty much finished. We have the odd broccoli and we are still digging potatoes, but other yummy veges are noticeably absent.
We are a family of three (two adults, one toddler) and I make my husband's lunch for him daily. He is a blue-collar worker who often eats when he is driving between worksites so doesn't often have a means to heat his meal.
We shop fortnightly, as we are paid fortnightly, but may do a wee ‘top up shop’ to grab some supplies mid-fortnight.
Finally, my cooking style is pretty basic. I love to cook but we are budget-conscious and very much a ‘meat and three veg’ family. I do plan on sharing my grocery shopping list in the future too!
Lifestyle Block Mama's fortnightly meal plan
MONDAY:
Lunch: Chicken wraps (with things like red onion, grated carrot, cheese, aioli etc) For my toddler I turn the wraps into quesadillas (one wrap, fill half with grated cheese, shredded chicken and finely sliced vege. Fold in half and fry on frying pan until cheese is melted and lightly toasted.)
Dinner: Beef mince nachos (we use things like grated carrot, grated beetroot, onion, chilli beans, canned diced tomatos and nacho seasoning in the mince. Top it off with sour cream, cheese, lettuce and sweet chilli sauce - yum! Oh, and don't forget the corn chips!)
TUESDAY:
Lunch: Chicken wraps (we usually do this for two or three following days until the wraps are used up.)
Dinner: Pork chops (nothing fancy! I might marinate them sometimes if cooking in the oven, but often I leave them as is if we are cooking them on the barbecue. Veges are often mashed spud, broccoli and corn on the cob.)
WEDNESDAY:
Lunch: Chicken wraps (again, sorry. We switch it up tomorrow haha.)
Dinner: Slow Cooker Curry. (Recipe found on Jaz.Mathisen's Instagram under ‘Throw It All In Curry’. We use beef or lamb cuts in this and we have also used venison when we have some in the freezer. The easiest, most delicious curry ever. Literally throw it all in the slow cooker and it's good to go with rice or naan bread at dinner time!
THURSDAY:
Lunch: Mousetraps (A Kiwi classic! I mix these up whenever I make them. They always have cheese and onion. Sometimes they have relish, sometimes sweet chilli sauce, often bacon or ham, sometimes spaghetti - watties of course! - but they always are on white bread or white burger buns sliced in half.)
Dinner: Steak (cooked on barbie. Sides range greatly with this dinner! Sometimes we have salad and chips, sometimes mashed spud and peas/broccoli and carrots, often mushrooms and onions are cooked on the bbq too and served.)
FRIDAY:
Lunch: Lasagne Topper (brought from supermarket freezer section) and savory scrolls (homemade)
Dinner: Pork Strips with mashed spud, broccoli and corn cob (in summer this dish slaps with a side salad and mini herby roasted spuds!)
SATURDAY:
Lunch: Bacon and Egg Pie
Dinner: Homemade Beef burgers
SUNDAY:
Lunch: Fend for yourself!! My husband doesn't work on Sundays and is at home, so it's up to him to have a pick around and see what he wants. Often he will sleep in, so will cook us bacon and eggs or something as a later breakfast and that covers us for lunch.
Dinner: Lamb roast (with potatoes, yams, carrots, beetroot, kumara and pumpkin if we have them handy!)
MONDAY:
Lunch: Bacon and Egg Bagels (the bagel recipe I use is foolproof and from the Kiwi Country Girl website.
Dinner: Pork Schnitzel
TUESDAY:
Lunch: Bacon and Egg Bagels (like the wraps, we usually do these for two or three days in a row while the bagels are still fresh - although they store great in the freezer!)
Dinner: Lamb chops with three vege and mint sauce.
WEDNESDAY:
Lunch: Homemade Pizza with bits from the fridge
Dinner: Pork roast with lots of vege
THURSDAY:
Lunch: Homemade sausage rolls (mince, sausage meat, grated onion, grated carrot and some relish - yum!!)
Dinner: Chicken parcels (we are a very beef, lamb, pork household but I do like to try and squeeze in two or three chicken dishes in a fortnight! This recipe is SO easy. I found it from a fellow Kiwi on Tiktok @saraelcock)
FRIDAY:
Lunch: Cheese and onion toasties
Dinner: Beef schnitzel (served with sweet chili sauce is divine! Also slaps with malt vinegar - try it!)
SATURDAY:
Lunch: Schnitzel sandwich (we often have leftovers from schnitzel!)
Dinner: Spag bol (I keep it super simple, my toddler loves it!)
SUNDAY:
Lunch: That’s right… fend for yourself!
Dinner: A roast! Beef, pork or lamb - whatever I pull out of the freezer first.
Voila! That’s what we have been eating in this household this fortnight. If you haven’t tried it yet, I really recommend meal planning. It helps save us time and money! After meal planning for a few years now, it is honestly second nature to me and I don’t often struggle with deciding what to feature each fortnight.
